Baked Potato Soup Recipe

Ingredients: 2 medium potatoes, baked and cooled, 1 can (14-1/2 ounces) chicken broth, 2 tablespoons

sour cream, 1/8 teaspoon pepper, 1/4 cup shredded cheddar cheese, 1 tablespoon crumbled

cooked bacon or bacon bits, 1 green onion, sliced. Peel and chop potatoes into 1/2-inch

cubes, putting half of them in a blender. When the broth is added, cover and process until

smooth. Transfer to a saucepan. Add the remaining potatoes, pepper, and sour cream and stir.

Cook (do not boil) over low heat until well heated. Add cheese, bacon, and onion as garnish.
