Cast-Iron Scrambled Eggs Recipe

Ingredients: 12 large eggs, 2 tablespoons water, 1/4 teaspoon salt, 1/4 teaspoon pepper, 2/3 cup finely chopped sweet onion, 1

jalapeno pepper, seeded and chopped, 2 tablespoons butter, 1 log (4 ounces) fresh goat cheese,

crumbled, 3 tablespoons minced chives. Whisk the eggs, water, salt, and pepper in a large bowl

and put it aside. A 10-inch cast-iron skillet should be placed over medium-high heat. Saute the onion

and jalapeño in butter in a pan until they become soft. Stir in egg mixture and heat until

almost set. Add the cheese and chives and heat, stirring, until the eggs are all set.
