Country Bacon-Beef Mac and Cheese Recipe

Ingredients: 5 bacon strips, chopped, 1-1/2 pounds ground beef, 1 medium onion, chopped, 3 garlic cloves, minced, 1 medium sweet red pepper, chopped, 1 large carrot, coarsely

grated, 1 tablespoon dried parsley flakes, 1/4 teaspoon salt, 1 teaspoon pepper, 3 cups uncooked protein-enriched or whole wheat elbow macaroni, 1 can (14-1/2 ounces) reduced-sodium

beef broth, 1 cup sour cream, 2 cups shredded sharp cheddar cheese, 2 cups shredded part-skim mozzarella cheese. Cook bacon in a large pan over medium heat for 5 to 6 minutes,

turning regularly, until crisp. Using a slotted spoon, remove and drain on paper towels. Reserve 1 tablespoon of the drippings for later. Crumble and brown ground beef in pan drippings; remove

from pan. Add onion to skillet; cook and stir for 2 to 3 minutes, or until transparent. Cook the garlic for one further minute. Put the spaghetti, red pepper, carrot, and spices in a 4-quart slow cooker.

Arrange the ground beef, bacon, and onion mixture in layers without stirring. Add the broth. Simmer on low, covered, for

approximately one hour, or until the veggies and meat are soft. Just before serving, mix in the cheeses and sour cream.
