Muffin-Tin Scrambled Eggs Recipe
Ingredients: 24 large eggs, 1 teaspoon salt, 1/2 teaspoon pepper, 1/4 teaspoon garlic powder, 1 jar (4 ounces) sliced
mushrooms, finely chopped, 1 can (4 ounces) chopped green chiles, 3 ounces sliced deli ham, finely chopped, 1/2 medium
onion, finely chopped, 1/2 cup shredded cheddar cheese, Pico de gallo, optional. Turn the oven on to 350°. Mix the eggs, salt,
pepper, and garlic powder together in a big bowl until well combined. Add the cheese, ham, onion, mushrooms, and chilies.
Fill 24 muffin cups that have been greased with about 1/4 cup of mixture each. Bake for 18 to 20 minutes, turning the pans halfway
through, or until the eggs are set. Before taking out of the pans, let stand for ten minutes. Serve with pico de gallo, if preferred.
