Quick and Fresh Gazpacho Recipe

Ingredients: 6 plum tomatoes chopped, 4 green onions chopped, ½

large cucumber, peeled and chopped, 1 red bell pepper, seeded and

chopped, ½ cup water, 2 tablespoons vinegar, 2 tablespoons olive oil,

salt and pepper to taste. In a blender, combine the tomatoes, bell

pepper, cucumber, green onions, and water; mix until smooth. Blend in the

vinegar and olive oil until well combined. To serve, add salt and pepper for seasoning.
