Three-Cheese Keto Cauliflower Casserole Recipe

Ingredients: 1 medium head cauliflower, cut into 1/2-inch pieces (about 10 cups), 4 tablespoons butter, divided, 1 tablespoon

canola oil, 4 ounces cream cheese, cubed, 3-1/2 cups shredded cheddar cheese, divided, 1-1/2 cups shredded mozzarella cheese,

divided, 1 cup 2% milk. Turn the oven on to 425°. Transfer cauliflower to a 15 x 10 x 1 inch baking sheet. Drizzle 1

tablespoon of melted butter over the cauliflower. Oil is added; toss to coat. Roast for 20 to 25 minutes, or until gently browned

and soft. Melt the cream cheese and the remaining 3 tablespoons of butter in a large saucepan over medium heat. Add milk, 1 cup

mozzarella, and 2 cups cheddar. Cook and stir for one to two minutes, or until sauce starts to thicken. Add cauliflower and fold

gently. Transfer to an 8-inch square baking dish that has been buttered. Add the remaining 1/2 cup mozzarella and 1-1/2 cups

cheddar over top. Bake, uncovered, for about 20 minutes, or until bubbling and cheese is melted. Ten minutes should pass before serving.
