Thyme-Sea Salt Crackers Recipe

Ingredients: 2-1/2 cups all-purpose flour, 1/2 cup white whole wheat flour, 1 teaspoon salt, 3/4 cup water, 1/4 cup plus 1

tablespoon olive oil, divided, 1 to 2 tablespoons minced fresh thyme, 3/4 teaspoon sea or kosher salt. Turn the oven on to 375°.

Combine salt and flours in a big bowl. Using a fork, gradually mix in 1/4 cup oil and water until the dough stays together when

pushed. Separate the dough into three halves. Each piece of dough should be rolled to a thickness of 1/8 inch on a surface

dusted with flour. With a 1-1/2-inch circular cookie cutter dusted with flour, cut. Arrange 1 inch apart on baking sheets without oil.

Using a fork, prick each cracker and then gently brush with the remaining oil. Combine sea salt and thyme and sprinkle on crackers. Bake for 9 to 11 minutes, or until the bottoms begin to faintly brown.
